A beginner’s level aptitude in cooking is enough to prepare this crisp batter fried egg dish. Basic yet beautiful and mouth watering recipe to follow

Ingredients
Honey: 1 Tbsp
Red Chili Sauce: 2 Tbsp
Soya Sauce: 2 Tsp
Dried Red Chillies: 2 No.s
Eggs (Hard Boiled and quartered): 4 No.s
Cornflour: 2 Tbsp
Refined Flour (Maida): 2 Tsp
Salt: As per taste
Oil: 2 Tbsp
Garlic (chopped): 4-5 cloves
Ginger (chopped): 1 Tbsp
Spring Onion with Bulbs & Greens: 2 No.s
Lemon Juice: 1 ½ Tsp
Method
For Honey Chili Sauce:
- Heat oil in a wok
- Make a slurry of remaining cornstarch & water. Mix well.
- Add garlic to the hot oil & sauté well till the raw smell goes away. Add ginger & sauté for one more minute.
- Now add spring onion bulbs & sauté. Add little water, soya sauce & broken red chilies. Mix well and add salt. Bring to a boil.
- Add dissolved cornstarch slurry to thicken the sauce, mix well, add honey & mix again.
- Add lemon juice and mix well.
- Cook for a minute, switch off heat & add some spring onion greens in the end. Mix well.
For the Crisp Eggs:
Combine all the dry ingredients, refined flour, salt and 1 tbsp cornflour in a bowl. Make a thick batter with normal water.
Heat sufficient oil for deep frying in a wok
Coat the eggs in the batter & crisp fry in hot oil. Take out on an absorbent paper to drain off the excess oil.
Toss the crisp fried eggs in honey chili sauce.
Presentation:
Serve hot and garnish with some more spring onion greens.
Notes:
- Eggs can be replaced with potatoes, chicken or cottage cheese.
- The dish can be served as a main course, starter or a side dish.
- Serve with egg fried rice or noodles.
